Smoked Beef Brisket (Tuesday) – per pound


Beef  Brisket, rubbed with a sweet chilli dry-rub smoked to delicious for about 18! hours, with three layers of maple or apple smoke.  There is a flavourful caramelized ‘bark’ on the outside with delicious juicy beef-love on the inside.  It looks ‘Medium-Rare’ but has achieved ‘fully cooked’ (well-done) by health standards. Maybe it’s the apple-juice glaze that keeps it so juicy? ☺
